What We Ate Last Week, September 30 – October 6, 2017

Ah, a new month!  I still have 30 meals in the freezer from last month’s freezer cooking session, which is a huge blessing both time and money wise.  However, this week I doubled all of the meals I made so that we have more variety with our freezer meals.  My family doesn’t like to eat the same thing over and over, so I try to have 12 to 20 different types of freezer meals in the freezer at a time so they can still have variety.

Lunch–ham sandwiches, carrot sticks, nacho chips
Dinner–Daiya pizza

This was the day we went on our big hike.  By the time we got home, we were exhuasted, so Daiya pizza it was!


Lunch–Rotisserie chicken, tomatoes, broccoli, rice
Dinner–don’t remember!


Lunch–chicken apple sausage, potato bites, broccoli

Dinner–Swirly Taco Pasta Skillet (from MyFreezEasy), broccoli


Lunch–breakfast for lunch

Dinner–Slow Cooker Chicken Enchilada Soup (from MyFreezEasy), salad

  1. Love nachos! Did you see the Paleo Cauliflower Nachos I linked last week? I didn’t get a chance to try them last week, but maybe I’ll give it a try for lunch this week.
