Menu Planning for June 4, 2017

We’re going with easy meals this week.  Last week we had some work done on our house, so we had to move to a hotel for two days, and then workers were here all day Friday.  We’ve mostly got the house back to a functional state, but now I’m trying to institute a new routine for our summer and get back into our schooling and chores like we were back in February before I had foot surgery.

Here’s the plan:

Monday

Lunch–Macaroni & cheese, broccoli, chicken apple sausage
Dinner–Slow Cooker Mexican Quinoa and Beef

Tuesday

Lunch–Taco rice, cucumbers
Dinner–Tuna noodle casserole

Wednesday

Lunch–Slow Cooker Chicken Tacos
Dinner–Pizza Casserole, broccoli

Thursday

Lunch–leftovers
Dinner–Gluten Free Goulash (making 2 so I can put one in the freezer), carrot sticks

Friday

Lunch–Beet pancakes, scrambled eggs, apple slices
