Menu Plan for June 25, 2017

This week, Vacation Bible School is over, and I’m set on the task of getting myself and the kids on a routine again.  We haven’t been on our regular routine since my foot surgery in March, so I’m more than anxious for this to happen.  I’m also making double of each of our dinners this week so I can have five more meals to put in the freezer.  Slowly, week by week, I’m building up our supply of freezer meals.

Saturday

Lunch–Beef and Tomato Stir Fry (omitting the corn starch)

Dinner–Chicken Apple Sausages, carrot sticks, cucumbers

Sunday

Lunch–Salmon, mixed veggies, rice, broccoli

Dinner–BLTs

Monday

Lunch–Bacon & Potato Frittata (using dairy free cheese)
Dinner–Beef Chili with Refried Beans (2x)

Tuesday

Lunch–Bean & Cheese Burritos (using dairy free cheese and gluten free burritos)
Dinner–Bacon Cheeseburger Nachos (2x)

Wednesday

Lunch–Chicken Apple Sausage, baked potatoes, broccoli
Dinner–Apple Butter Glazed Chicken (2x)

Thursday

Lunch–Slow Cooked Mexican Chicken Tacos
Dinner–Apricot Meatballs

Friday

Lunch–leftovers
Dinner–Beef & Sweet Potato Stew
