Menu Planning for May 14, 2017

Last week, I managed to double three of my meals, so I have three meals in the freezer–Sloppy Joes, Hearty Vegetable Soup, and Split Pea Soup.  This week I hope to get at least three more meals in the freezer.

Sunday

Lunch–Steak, broccoli, rice and quinoa
Dinner–Ribs, baked potatoes, cucumbers & salad

Monday

Lunch–Mini Hot Dogs, broccoli
Dinner–Baked Chicken Thighs, Paleo Cauliflower Fried Rice

Tuesday

Lunch–Quesadilla with brown rice tortilla and Daiya cheese, refried beans, carrot sticks
Dinner–Spanish Rice Skillet (2x for freezer), broccoli

Wednesday

Lunch–Turkey Fajita Hash with Daiya Cheese served over corn chips (2x for freezer)
Dinner–Juicy Apple Turkey Burgers (2x for freezer), baked potatoes, veggie

Thursday

Lunch–leftovers
Dinner–Tuna Noodle Casserole, carrot sticks

Friday

Lunch–Daiya mac & cheese, lunch meat, carrot sticks
Dinner–GF, DF Goulash (3x for freezer)

Other Items I’ll Make for the Freezer

Pumpkin Chocolate Chip Muffins (I’ll adjust the recipe to use less sugar and chocolate chips)
