Menu Planning for April 23, 2017

Whew, it’s been a long time since I’ve had to menu plan.  Before my surgery, I filled the freezer, and for the last 5 weeks, we’ve lived off the freezer stash.  But now we only have three freezer meals left (boo-hoo!!), so it’s time to cook again.

This week will be a busy week, and it will also be the first week I’ll be on my own since foot surgery, so I want easy meals.  (My mom is going home after being here for 6 weeks to help out.  Thanks, mom!)

Here’s the plan:


Lunch–Cabbage & Sausage with Rice
Dinner–Kale, Chicken Apple Sausage & Rice Soup


Lunch–Eggs, Beet Pancakes, Bacon
Dinner–Moroccan Ground Beef with Zucchini and Tomatoes

Moroccan Ground Beef with Zucchini and Tomatoes


Lunch–Turkey burgers, baked potatoes, green beans
Dinner–Spaghetti with ground turkey, homemade garlic bread


Lunch–Slow Cooked Mexican Chicken Tacos
Dinner–Vegetable Beef Soup


Lunch–DF/GF Mac & Cheese, broccoli
Dinner–Sausage & Spinach Soup (from the freezer)
