Menu Planning for July 5, 2015

We’re on our second week of our pantry challenge, so things are getting a little more interesting.  However, we still have plenty of good food left, so we’re not too challenged yet.  🙂


Lunch–pork chops, sweet potato fries, mixed veggies
DinnerSlow Cooker Stuffed Peppers


Lunch–tuna salad sandwiches, carrot sticks, apple slices
DinnerCrockpot Lasagna Soup (using gluten free pasta, bison instead of the sausage, & no cheese)


Lunch–beet pancakes, pork patties, fruit smoothies
Dinner–spaghetti with Jamie Oliver sauce & ground turkey, mixed veggies


Dinner–Zucchini, Carrot, chicken veggie soup (this is something I’m creating, so I hope it turns out!)


Lunch–leftover soup & cheese quesadillas with brown rice tortillas and Daiya cheese
DinnerSlow Cooker Tortilla Chicken Soup (minus the corn)


Lunch–eggplant patties, frozen mixed veggies, diced potatoes
Dinner–TBD–likely a meal from the freezer


Lunch–salmon, broccoli, brown rice
