Menu Planning for April 19, 2015

We save a lot of  money on our groceries by getting a significant chunk of produce from POW WOW.  However, there are only four more weeks of POW WOW left until they close for the heat of the summer.  They won’t start up again until November.  Although I don’t get POW WOW produce every week, I do plan to get it for the next 4 weeks so I can stock my freezer with some meals.

Here’s the plan for this week along with our freezer cooking plan:

Sunday

Lunch–Cabbage and Beef Casserole
Dinner–Grilled chicken, hamburgers, sausage (not all at once!), salad, sweet potatoes, diced potatoes

Monday

Lunch–Tuna Noodle Casserole

Dinner–Homemade sushi with smoked salmon, cucumber, and avocado (one of our children’s requested birthday dinner)

 

Tuesday

Lunch–Tuna patties, roasted cauliflower, rice
Dinner–Leftover grilled foods from Sunday

Wednesday

Lunch–leftovers
Dinner–Amish Ground Beef & Cabbage One Dish Skillet Meal (I have cabbage that I bought for .11 a pound at St. Patrick’s Day that I need to use up)

Thursday

Lunch–ham sandwiches, carrot sticks, Beanitos
Dinner–Old Fashioned Vegetable Beef Soup (we didn’t get to make this last week)

Friday

Lunch–leftovers

Dinner–TBD based on what fresh veggies we still need to use up at this point

For the freezer:

Veggie Soup x2 (I’m going to use tomato sauce instead of V-8 and add some ground pork for more flavor.)

Jamie Oliver Spaghetti Sauce x4

  1. That Smoked Salmon sushi sounds very yummy! Don’t know that I can talk my daughter into that for her birthday, though. Might have to wait until my birthday next month. 🙂
