Menu Planning for December 21, 2014

I was seriously tempted to skip menu planning this week.  We’re going to have a busy week.  Wouldn’t it just be easier to wing it?  But last time I tried to wing it, we wasted food because I was making everything last minute.

So, here I am menu planning.  🙂  Ironically, the busy weeks are when I most need a menu plan because I don’t have the time to find and make recipes during the week.

Here’s our plan:

Gluten Free, Dairy Free Menu


Lunch–Acorn Squash with Ground Turkey and Apples
Dinner–Roasted Chicken, Fried Potatoes, Diced Carrots


Lunch–Roasted Tomato Soup, Tuna Sandwiches
Dinner–Crispy Chicken Fingers (these were such a hit last week, we’re making them again!), roasted green beans


Lunch–Turkey and Beef Meatballs, Green Beans with Cherry Tomatoes
Dinner–Beef Pot Pie


Lunch—Iranian Kebob (I’ll use dairy free butter)
Dinner–Slow Cooker Hawaiian Chicken, rice, veggie (TBD)


Dinner–Ham, Mashed Potatoes and Gravy, roasted carrots



Lunch–Scalloped Potatoes, green peas








Dinner–Tuna Noodle Casserole

Groceries for the Week–$209.66

My goal is to spend no more than $500 every 4 weeks for groceries.  Last week I spent $45.43, so my total for 2 weeks is $255.09.  However, since my mom is visiting for a month, this 4 week period only, we’re budgeting $550 to make up for feeding an extra person.

This week I shopped at Fry’s, Trader Joe’s, Costco and POWWOW

Here’s what we got:

Fry’s – $28.85

(not pictured–4 pounds of grass fed ground beef & 2 boxes of GF rice krispies)

Costco – $140.22

    Oh, I love acorn squash. I like to stuff mine with pork sausage and lots of veggies.
