This week I’m going to try to make a few meals to put in the freezer, but that will be a challenge because while our VRBO is very well stocked, it’s well stocked for a family of 2. The crockpot is so tiny! We fill it to the top when we make a meal for our family, so there’s no room to double a recipe. Still, I’m going to try to fill the freezer a little bit.
We’re supposed to move into our house at the end of next week, and we want to start working on repainting the cabinets immediately. (The cabinets are VERY dated and one of the reasons why I didn’t even want to look at the house when my husband showed me the house on the Internet. Thank goodness for hubby’s persistence!)
Here’s the menu plan for the week:
Monday–Chicken, Zucchini & Sweet Potatoes on the grill
Tuesday—Slow Cooker Sloppy Joes, chips, carrot sticks (x3 so it should make 3 meals for us)
Wednesday—Chicken Pot Pie (making this with oil instead of butter and without the topping)
Thursday—Cabbage Roll Soup (x2 for one meal to go in the freezer)
For lunches we’ll likely have leftovers or sandwiches.
