Menu Planning for August 3, 2014

This week I’m going to try to make a few meals to put in the freezer, but that will be a challenge because while our VRBO is very well stocked, it’s well stocked for a family of 2.  The crockpot is so tiny!  We fill it to the top when we make a meal for our family, so there’s no room to double a recipe.  Still, I’m going to try to fill the freezer a little bit.

We’re supposed to move into our house at the end of next week, and we want to start working on repainting the cabinets immediately.  (The cabinets are VERY dated and one of the reasons why I didn’t even want to look at the house when my husband showed me the house on the Internet.  Thank goodness for hubby’s persistence!)

Here’s the menu plan for the week:

Monday–Chicken, Zucchini & Sweet Potatoes on the grill

TuesdaySlow Cooker Sloppy Joes, chips, carrot sticks (x3 so it should make 3 meals for us)

WednesdayChicken Pot Pie (making this with oil instead of butter and without the topping)

ThursdayCabbage Roll Soup (x2 for one meal to go in the freezer)

FridayPaleo Chicken, Sausage and Kale Soup

For lunches we’ll likely have leftovers or sandwiches.

100_4220For breakfasts, we’re planning on a few quick favorites such as Slow Cooker Bread Pudding, coconut yogurt and fruit, chia seed pudding, and Udi’s raisin bread toast, sausage, and fruit.
