Menu Planning for June 22, 2014

My plan this week is to have mostly slow cooker recipes that I can double so I can put more meals in the freezer in preparation for visits to my mom’s house and for the last few weeks before our move.  Here’s what we’re planning:

MondaySpanish Rice with Sausage & mixed veggies

TuesdayChicken and Rice Soup (double recipe and don’t add rice to the half that is going in the freezer)

WednesdaySlow Cooker Pumpkin Chili

ThursdaySlow Cooker Meatloaf and Potatoes (also adding baby carrots to the bottom with the potatoes)

FridaySlow Cooker Sloppy Joes, chips, broccoli

Saturday–Dad’s choice

Sunday–Dad’s choice

  1. These are all healthy recipes for a whole week. I’m trying to make a new menu too, because my doctor advised me to minimize eating from meat and more on vegetables and fruits.

  2. Great menu ideas! I often use my slow-cooker more in the cooler months, but I don’t know why. It certainly keeps your kitchen cooler than than an oven does.

      I use it more in the winter too, but with our move, I’ll have to get used to using it in the summer to keep the heat out of the kitchen.
