Menu Planning for February 16, 2014

Our freezers are starting to empty out, so next month we’ll be buying a half side of beef.

I inventoried our freezers this weekend, and I was surprised to find some freezer meals that I had made with our excess CSA produce in the summer months.  Thanks to these finds, I’m hoping I won’t have to go grocery shopping for the rest of the month, or if I do, that it will just have to be a small grocery run.  That will give us more money to put toward the beef purchase since it tends to run around $600.

Here’s the menu plan for the week.

Items with a * denote meals that are already in the freezer:

Saturday–White Fish with Veggies & Rice


Sunday–Hamburger with Lettuce “Bun” and Sweet Potato Fries


Monday–Potato Soup with Bacon & Steamed Broccoli

Tuesday–Spaghetti with Meatballs*

Wednesday–Taco Salad & Island Guacamole

Thursday–Stroganoff*,  Sauteed Kale

FridaySwiss Chard Soup, Hamburger Patties and Guacamole
