Menu Planning for January 26, 2013

Another busy week this week!  We have co-op, a spelling bee, a birthday party and our regular weekly activities of choir and speech class.  I’ve been enjoying staying at home more this winter, but we won’t be doing much of that this week.

So, out of a desire to keep my sanity, I’m planning super simple meals this week:

MondayHamburger Soup, sauteed Swiss chard








Tuesday–beef roast with potatoes, carrots, and parsnips

WednesdayStacked Tacos and guacamole


ThursdayChicken & Rice Soup with broccoli on the side

Friday–Italian Sausage and Red Peppers

  1. I like the Stacked Tacos idea! Sounds like something my family would enjoy.

  2. I see what I might have in the freezer that I can quickly pull out! I wish that I had more pre-made in there.
