Menu Planning for December 22, 2013

Whole Foods had grass fed beef on sale for $4.99/lb. this weekend, so I bought 10 pounds and made some freezer meals.  We’re out of our 1/4 side of beef we bought, so we haven’t had beef in quite awhile.  This was a nice treat, and I’ll be feeding my family those freezer meals much of the week this week.  As soon as we make some freezer space, we’ll buy another 1/4 side of beef.

We’re also preparing for holiday parties.  Holidays can be hard on the kids since they can’t have gluten, dairy, eggs, and a host of other items.   For Christmas morning we’re planning a special breakfast, and for Christmas night when we attend a family party, we’re making Gluten Free, Dairy Free Banana Bread as well as GF pretzels dipped in Enjoy Life chocolate chips that are melted.

Lunch–Stuffed Acorn Squash
Dinner–Salmon, spinach & carrots and rice

Lunch–Taco Soup with guacamole & chips
Dinner–pork chops, roasted turnips and radishes

Wednesday (CHRISTMAS!)
Breakfast–Blueberry Buckle, Sausage
Lunch–Ham, Sweet Potatoes, Broccoli
Dinner–Leftovers & snack-type foods


 Ground Beef Goulash*, carrot sticks


Cabbage & Ham Sautee (using leftover ham from Christmas)
