I’m seriously burning out on my restrictive diet, but I keep with it because I know that I’m healing. It’s just a slow process.
I also got tested for some food allergies. I noticed that often when I eat nuts, especially cashews and walnuts, my throat feels strange and my ear gets stuffed up. I’m hoping it’s not an allergy but something weird my body does now that will go away when my leaky gut is completely healed.

Monday–Chicken Apple Sausage Soup with Kale (Double batch–one for today and one for the freezer)
Wednesday–Beef Tacos, Guacamole (will make double batch of the taco meat–one for the freezer)
Friday–Traditional Minestrone (both Thursday & Friday’s recipes come from a new cookbook I borrowed from the library–Paleo Slow Cooking by Chrissy Gower)
