Menu Planning for September 7, 2013

100_5397Bookworm and I had a blood draw yesterday for another food intolerance test.  We’ll get the results back in 3 to 4 weeks, and hopefully it will show that we continue to get foods back.

I’m seriously burning out on my restrictive diet, but I keep with it because I know that I’m healing.  It’s just a slow process.

I also got tested for some food allergies.  I noticed that often when I eat nuts, especially cashews and walnuts, my throat feels strange and my ear gets stuffed up.  I’m hoping it’s not an allergy but something weird my body does now that will go away when my leaky gut is completely healed.

Saturday–Beef Stir Fry with Broccoli and Fresh Corn

Sunday–Husband’s choice

MondayChicken Apple Sausage Soup with Kale (Double batch–one for today and one for the freezer)

TuesdayTomato, Beef and Green Pepper Stir Fry

Wednesday–Beef Tacos, Guacamole (will make double batch of the taco meat–one for the freezer)

Thursday–Stuenkel Stew

Friday–Traditional Minestrone (both Thursday & Friday’s recipes come from a new cookbook I borrowed from the library–Paleo Slow Cooking by Chrissy Gower)

For the Freezer

Eggplant Burgers

Almond Butter Bars (double batch)

  1. I have an allergy to walnuts and pecans and that is exactly the way my throat and ears feel. I know you don’t want to hear it, but it sounds like a reality. The only way I can describe the way my ears feel is itchy and that I want to scratch at them like a dog or dig a q-tip down there to a region that I could never touch. It is often followed by a headache.

    Your menu sounds great. I am interested in what Stuenkel Stew is.

  2. I hope the tests help narrow things down for you, and am glad things are healing. 🙂 You menu sounds delicious! The Minestrone sounds like a lovely idea right now with all the end of season produce from the garden. Yummy! I would LOVE to hear what Stuenkel Stew is, too.

  3. Glad you put beef stir-fry on your menu. I haven’t made that in a while, and need to get it back on my menu. Sounds great.
