Menu Planning for September 21, 2013

Butternut SquashNo photos of all of our luscious CSA bounty because my camera is on the fritz.  :(

However, can I just tell you how happy I am that it’s fall?  I’m loving the cooler days and enjoying all the fall squash.  One of my favorites is butternut squash.  Last Thanksgiving, a family friend made a pureed butternut squash that was fantastic!  I’ll share the recipe on Monday.  So easy and delicious!

Here’s what’s on our gluten free, dairy free menu plan for the week:

Saturday–Spaghetti squash with homemade spaghetti sauce and meatballs

Sunday–Shredded pork tacos with lettuce and tomatoes

Monday–Beef roast in the slow cooker with potatoes. I usually add carrots, but Bookworm is intolerant, so I’ll serve those on the side to the rest of the family.)

TuesdayAcorn Squash Stuffed with Ground Beef

WednesdayChicken Apple Sausage Soup with Rice and Kale

Thursday–Bacon Wrapped Turkey Tenderloins with Carrots and Homemade French Fries

Friday–Leftovers

For the Freezer

“Cream” of Broccoli Soup

Beet Pancakes

Dice peppers for the winter

Pumpkin Pucks

Cabbage with Meatballs
