This is going to be a busy week.
My mom is having knee replacement surgery, so we’ll be helping her out a bit.
Then, you might remember I said we rented two organic apple trees? Well, the first one, the Paula Red, is ready to be picked, so sometime this week we’ll be heading out to the farm, kids in tow, to pick all of our apples. I can’t wait to see what the process is like and how many we get.
Then, it’s time to make and can applesauce.
Oh, don’t forget, we’ll also be homeschooling.

Gluten Free, Dairy Free Menu Plan
Sunday–Roasted Chicken, Tomato & Basil salad, green beans, rice
Monday—Chicken Apple Sausage, Kale & Rice Soup (x2, one meal will go in the freezer)
Tuesday—Beef and Cabbage Soup (minus the beans, double the cabbage)
Wednesday—Eggplant Burgers, diced tomatoes, rice
Thursday–Pulled pork on gluten free buns, cucumber slices, chips
Friday–Beef chuck roast, potatoes, peppers
For the Freezer (and canning jars :))
Applesauce (lots and lots of applesauce)
