Menu Planning for August 17, 2013 – Apples

This is going to be a busy week.

My mom is having knee replacement surgery, so we’ll be helping her out a bit.

Then, you might remember I said we rented two organic apple trees?  Well, the first one, the Paula Red, is ready to be picked, so sometime this week we’ll be heading out to the farm, kids in tow, to pick all of our apples.  I can’t wait to see what the process is like and how many we get.

Then, it’s time to make and can applesauce.

Oh, don’t forget, we’ll also be homeschooling.

Yep, sounds like a busy week to me!

Here’s our menu for the week:

Gluten Free, Dairy Free Menu Plan

Sunday–Roasted Chicken, Tomato & Basil salad, green beans, rice

MondayChicken Apple Sausage, Kale & Rice Soup (x2, one meal will go in the freezer)

TuesdayBeef and Cabbage Soup (minus the beans, double the cabbage)

WednesdayEggplant Burgers, diced tomatoes, rice

Thursday–Pulled pork on gluten free buns, cucumber slices, chips

Friday–Beef chuck roast, potatoes, peppers

For the Freezer (and canning jars :))

Beet Pancakes

Applesauce (lots and lots of applesauce)

What Others Have on Their GF Menus This Week

Heather at Celiac Family has a delicious looking menu that includes things like Rainbow Apple Salad (which I’m planning on making with some of our apples!) and Indian Chicken.

Over at Gluten Free Detroit Metro’s menu, you’ll find summer favorites like BLTs and Taco Salad as well as Michigan Salad with Chicken.  Sounds divine!

The Girl Who Couldn’t Eat Anything has a tasty menu featuring including Vegetarian Lentil Meatballs.  I love her plan of making the whole month’s menu in advance.  Then, just pick your sides!

  3. Good luck with your mom’s knee surgery! My mother had one done 2 years ago and the second this past May. She moves around so much better now. It is worth doing all those exercises! :)
