Menu Planning for July 27, 2013

100_5232The CSA basket is full of lovely foods we’ve never prepared before.  This week, tomatillos were our new item.  It’s fun getting to try new foods this way!

Here’s our menu plan for the week:

Gluten Free, Dairy Free Menu Plan

Saturday:  Chicken Enchiladas with Tomatillo Salsa on the side

Sunday:  Pork Chops with Roasted Broccoli and Cauliflower

Monday:  Creamy Swiss Chard Pasta (will use gluten free pasta and homemade soy yogurt)

Tuesday:  Swiss Chard and Penne Soup (with some grass fed Polish sausage added)

Wednesday:  Grass Fed Hot Dogs, Zucchini Casserole (with gluten free bread)

Thursday:  Leftovers

Friday:  Tomato, Beef and Green Pepper stir fry

For the Freezer:

Beet Pancakes

Eggplant Burgers

Chicken Apple Sausage Soup with Kale
