Menu Planning for May 26, 2013

Do you ever have one of those months where there is a lot more month than there is money?  That’s what’s happening to us this month.  We ended up having an inadvertent pantry challenge, so the meals around here have been tasty, but strange.  I’m hoping to finish out strong, even though we’ll be making meals with the odds and ends we have on hand.

Sunday–Spaghetti with The Best Tomato Sauce Ever

MondayLighter Meatloaf, homemade fries, mixed veggies

TuesdayChicken Pesto Soup (with Swiss Chard instead of spinach)

WednesdayTuna Noodle Casserole

ThursdayBean Soup with Chicken & Veggies

FridayMexican Black Bean Chili (without the taco shells)

Yee haw!  It’s Saturday and time to buy some groceries!

My Meal Plan (Paleo Auto Immune)

I’ll be eating these foods throughout the week:

Apple, blueberry, cantaloupe, pear, watermelon, kiwi, mango, honeydew
Broccoli, cabbage, cauliflower, celery, onion, squash, sweet potato, beets, swiss chard, collard greens
Beef, chicken, lamb, pork, turkey, bison

  1. I am looking forward to trying the Mexican Black Bean Chili and and the Tuna Noodle Casserole. I always used to love my moms Tuna Casserole and it has been ages since I have had some. Your pictures make me want some of it right now..:)
