Do you ever have one of those months where there is a lot more month than there is money? That’s what’s happening to us this month. We ended up having an inadvertent pantry challenge, so the meals around here have been tasty, but strange. I’m hoping to finish out strong, even though we’ll be making meals with the odds and ends we have on hand.
Sunday–Spaghetti with The Best Tomato Sauce Ever
Tuesday—Chicken Pesto Soup (with Swiss Chard instead of spinach)
Wednesday—Tuna Noodle Casserole
Thursday—Bean Soup with Chicken & Veggies
Friday—Mexican Black Bean Chili (without the taco shells)
Yee haw! It’s Saturday and time to buy some groceries!
