Menu Planning for April 7, 2013

100_4345aWhew, I had a crazy busy Sunday stocking up the freezer with yummy meals for the family that are gluten free, dairy free.  But before I relax and put my feet up at dinner time for the rest of the month, I have to make a few more meals this week to use up the leftover veggies we have.  Then, I’m relaxing!

Items with a * are meals already in the freezer:

Menu Plan for the Family (Gluten Free, Dairy Free)

Monday–Carrots, Potatoes, and Roast (with this homemade onion soup mix for flavoring)

TuesdayMeatloaf*, spinach, dairy free mashed potatoes

WednesdaySlow Cooker Hamburger Soup, gluten free bread & dairy free butter

ThursdayJamie Oliver’s Pasta Sauce*, Turkey Meatballs*, gluten free spaghetti

FridayTaco Soup*, tortilla chips, Island Guacamole

My Meal Plan (Paleo Auto Immune)

I’ll be eating these foods throughout the week:

Apple, blueberry, cantaloupe, pear, watermelon, kiwi, mango, honeydew
Broccoli, cabbage, cauliflower, celery, onion, squash, sweet potato, beets, swiss chard, collard greens
Beef, chicken, lamb, pork, turkey, bison

  1. I’m seeing lots of birthdays this week. Happy Birthday to you! Are you taking a break from the diet with a birthday splurge?

    • I did have a birthday splurge–Surf Sweets jelly beans. I’m hoping next year I’ll be healed enough that I’ll be able to enjoy a gluten free, dairy free cake. Thanks for the good wishes.
