Another week, and another light cooking week because I’m reaping the rewards of my freezer cooking session. I’m loving this and already planning our freezer cooking menu for April!
If you didn’t see my Facebook inquiry, I’m considering writing a post that gives freezer cooking meals, complete grocery list, and step-by-step directions. If this is something you’d be interested in, please leave me a comment and let me know what kind of recipes you would like as well as if you’d like breakfast and dinner recipes or just dinner recipes!
Here is the menu plan for the week:
For the Family (Dairy Free & Gluten Free)
*denotes meals that are already made in the freezer
Saturday
Lunch–Veggie/Bean bake (I’ll share the recipe on Monday)
Dinner–Beef Taquitos*, Guacamole & chips
Sunday
Lunch–Black Beans, Beef & Rice (from eMeals‘ gluten free plan)
Dinner–Beef N Tater Bites*, Swiss Chard, homemade french fries
Monday
Taco Soup*, guacamole, chips
Tuesday
Southwestern Soup*, gluten free crackers
Wednesday
Sweet and Sour Meatballs* (without the pineapples as my family decided last time that they don’t like hot pineapples), rice
Thursday
Beef & Cabbage Soup*, gluten free bread with dairy free butter
Friday
Quinoa Chili*
My Meal Plan (Paleo Auto Immune)
I’ll be eating these foods throughout the week:
Apple, blueberry, cantaloupe, pear, watermelon, kiwi, mango, honeydew
Broccoli, cabbage, cauliflower, celery, onion, squash, sweet potato, beets, swiss chard, collard greens
Beef, chicken, lamb, pork, turkey, bison

My husband would love the Sweet and Sour Meatballs, especially with the pineapple! I’ll have to give them a try. Thanks for sharing the idea.
