Menu Planning for January 6, 2013

As a family, we are going gluten free as a trial for 6 weeks.  I’ll explain more in tomorrow’s post, but based on that decision, here is the gluten free plan for the family:

Monday–Cabbage and Beef Soup, Paleo Cornbread

TuesdayHearty Hamburger Soup

WednesdayBaked Egg Casserole

Thursday–Pasta e Fagioli, Coconut Flour Biscuits

FridayPasta, Pesto and Peas

Saturday–TBD

Sunday–TBD

For a snack or a breakfast, I am also planning on making Gluten Free Pumpkin Squares.

This week I am not making a menu plan for myself, not because I don’t plan to eat :) , but because I had a more extensive food intolerance test done in early December, and this week I finally get the results back.  I am waiting to make a menu plan until I find out if any of my intolerances have improved or if I have any new ones.

So glad you are joining us in the Gluten-free menu swap this week. I love the variety of recipes and sites that each blogger brings to our roundups. Looks like you’ve got a good start to trying gluten free! And dairy-free, too? Love it!
