Menu Planning for January 26, 2013

I am entering my third rotation of foods this week, and this week has some foods I enjoy like cauliflower and spinach as well as some I really don’t enjoy that much like lamb.  While rotating my foods has taken awhile to get used to, I am settling in nicely and am beginning to feel like I am making progress physically.

Here is our meal plan for the week:

For the Family (Gluten & Dairy Free)

Saturday
Lunch–Slow Cooker Chicken, Mixed Vegetables, oatmeal/banana muffins
Dinner–Beef Stir Fry with Napa Cabbage, Carrots, Celery and Rice

Sunday
Lunch–Garlic Soup with Pesto and Cabbage, garlic bread (from the 300 Sensational Soups book.  Enter the giveaway here.)
Dinner–Shredded chicken tacos using Coconut Flour Tortillas

Monday
Polenta with Swiss Chard and pasta sauce

Tuesday
Mexican Beans & Veggies with Rice

Wednesday
Leftovers

Thursday
Breakfast for dinner–bacon, eggs, strawberry/banana smoothies and Gluten Free, Dairy Free Waffles

Friday
Beef, Chickpea & Spinach Soup (again, from the 300 Sensational Soups cookbook)

My Meal Plan (Paleo Auto Immune)

Saturday
Chicken, Cauliflower “Mashed Potatoes”, Cucumber slices

Sunday
Lamb loin chop, sauteed cabbage with chicken broth, pear

Monday
Ground chicken balls in chicken broth and spinach

Tuesday
Salmon, spinach, cauliflower “mashed potatoes”

Wednesday
Sole, roasted sweet potato, spinach

Thursday
Chicken patty, roasted turnips, sauteed cabbage

Friday
Salmon, roasted sweet potato, pear

Looks delicious! I just got a Paleo cook book called Well Fed: Paleo recipe for people who love to eat. The recipes are delicious. I Mashed cauliflower!
