Menu Planning for December 30, 2012

After a busy Christmas week, we are ready to settle down to our normal routine again.  Here is our plan for the week:

For the family:

MondayBaked Egg Casserole (using diced potatoes instead of stuffing)

Tuesday–Soy Glazed Steaks (from eMeals‘ Paleo plan), spinach and Dairy Free Cornbread

Wednesday–Roasted Brussells Sprouts with Salmon

ThursdayPinto Beans, Ham Hock & Rice with leftover cornbread

FridayBeef Stew with Cabbage, bread

Saturday–Hamburger patties, Zucchini patties, carrot sticks

Sunday–TBD

For me:

Monday–Chicken Thigh, Collard Greens, acorn squash

Tuesday–Soy Glazed Steaks (from eMeals‘ Paleo plan), spinach

Wednesday–Roasted Brussells Sprouts with Salmon

Thursday–Smoked Salmon, Sauteed Swiss chard

FridayBeef Stew with Cabbage

Saturday–Pork chop, rustic bacon & pumpkin soup

Sunday–TBD

I need to start planning our meals again. We hate trying to figure what to eat for dinner every day.

Yes, I am a mess if I have had a busy day and don’t have a meal plan. It really saves me quite a bit of money.

MPM definitely keeps me on track. I actually look forward to Mondays!
This New Year’s Eve, I’m staying home, cleaning our house and doing some blog visiting. Hubby had to work so it will be quiet.
