I don’t have good childhood memories of Brussels Sprouts, but our CSAs this year have taught me that I do actually like vegetables I turned my nose at previously like kale and Swiss chard, so hopefully that will also be true with Brussels Sprouts. Here is the meal plan for the week:
Sunday–Whole wheat beef tacos and salad
Monday–Roasted Salmon and Brussels Sprouts Bake, Roasted Acorn Squash
Tuesday–Beef Stew with Butternut Squash, homemade bread for the family
Wednesday–Mexican Chicken and Bean Soup (part of eMeals‘ 5 day slow cooker free download when you join or if you are already a member)
Thursday–Easy & Delicious Sausage Frittata, sauteed spinach, fruit
Friday–Vegetarian Tortilla Soup (from eMeals‘ Clean Eating Plan)
Saturday–Mustard Roasted Chicken Breasts over Potatoes and Carrots (from eMeals’ Clean Eating Plan)
