Banana Chocolate Chip Muffins – Dairy Free

I was looking for a yummy recipe with just a hint of chocolate when I found this recipe on Food.com.  Of course, I can never take a recipe and make it exactly as stated.  I have to make my own changes to make it healthier and dairy free.  Honestly, I don’t know what the original tastes like, but I loved my modified version.

If you want to eat a muffin that can pass for a breakfast or dessert, these are the muffins for you!

Banana Chocolate Chip Muffins – Dairy Free

3 medium, very ripe bananas

1 egg

1/3 cup rice milk

1/4 cup granulated sugar

1/4 cup brown sugar

3/4 cup white flour

3/4 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

1/4 cup mini dairy free chocolate chips

Directions

-Preheat oven to 350 degrees.

-Spray the muffin pan with non-stick cooking spray.

-In a large bowl, mash the bananas.

-Stir in the eggs, milk and sugars.

-In a separate bowl, mix the flour, baking soda and salt.

-Mix the dry ingredients into the wet ingredients.

-Stir in the chocolate chips

-Fill the muffin pan and cook in the oven for 20 minutes or until a toothpick inserted in the center comes out clean.

I love Banana chocolate muffins. Try making them with Almond Flour for an even healthier recipe. No milk required at all.
