Mexican food makes its way onto our menu at least once a week, but often more. Our favorite staples are beef tacos with cherry tomatoes from the garden and homemade chicken enchiladas. We serve them both with salad and guacamole. In fact, whenever my two year old sees an avocado now, she shouts out, “Guacamole!”
When I was asked to review Tortillas To the Rescue Cookbook, I was interested and a bit skeptical that someone could come up with 100 different recipes using tortillas. However, Jessica Harlan, a graduate of the Institute for Culinary Education in New York City, did just that.
We sampled several recipes in this book. Ironically, the soups were what sold me the most. We enjoyed both the Tortilla Soup and Black Bean Soup with Tortilla Bowls; I am sure both will make their way on the menu again.
There were also some recipes that looked delicious but just aren’t the same without the cheese, like quesadillas, so we skipped them even though in years prior when we could have dairy, I would have made and enjoyed them.
This book has recipes for breakfast, lunch and dinner. It would be great for a college student, someone who loves Mexican food or a family on the go that needs quick meals.
The only drawback of this book for me is that it didn’t contain any pictures. I would have loved to have seen at least a small section with pictures. Still, we loved every recipe we tried, so that helps make up for the lack of pictures.

I eat so many cheese quesidillas (quick, easy, cheap and yummy lunch) that i have to say it’s my favorite tortilla recipe.
I love something called slop. It has chicken, salsa, cheese, tortilla shells, and…well I don’t know. It was made by someone else. Soooo good.
We love, love, love mexican food in this house! If only I could find a good and easy recipe to make a truck load of tortillas… Couldn’t think of a favorite recipes, but we sure do enjoy enchilladas and enchilada pies. As far as the kids, they love having peanut butter and banana wraps in their lunches.
Chicken Quesodillas is one of my favorite!

Default favorite recipe: quesadillas. I also like to make “Mexican Lasagna” using taco meat, enchilada sauce instead of pasta sauce, and tortillas instead of noodles.

My favorite is my Enchillada’s with tortilla’s.
My favorites are wraps, especially during the summer when you don’t want to cook and heat up the house. I use hummus, lean turkey,lettuce, tomato and shredded cheese.

my favorite is a dessert hubby came up with-large flour tortilla with some marshmallows, choco chips/peanut butter ( or both!)
roll up and nuke for about 45 seconds. yummy!

My favorite tortilla recipe is to make tortilla pizzas in the microwave. Super easy, just poke some holes in tortilla(w/a fork ), put between two paper towels and microwave for about a minute. You don’t want it to burn or catch on fire! So, you need to stand there and watch it! The tortilla will get hard like a crust, then you just put sauce, cheese and toppings on it and microwave again until hot!
