Link Love – The Back to School Edition

by Melissa on August 23, 2012

We have had a wonderful, crazy busy summer, but now school is going to start in just a few days.  While school days offer routine, they are still busy with homework, extracurricular activities and just drop off and pick up of two different kids at two different schools at two different times.

Today I picked a few posts that might help your day run a little more smoothly this fall (and save you some money):

Reading

How to Eat Beans Every NightThe Prudent Homemaker – I am thinking that cutting into the grocery budget is a good way to find extra money to snowflake, assuming we can still eat well.  This post offers 10 bean meals in a variety.  I think I’ll have meatless dinners twice a week in the fall.

Freezer Crockpot Cooking Round 2 - Kojo Designs – I love this idea!  Chop meats and veggies for a few hours and have 14 freezer meals that you simply dump in the slow cooker the day you want to eat them.  When my freezer starts to empty out from my CSA freezer cooking sessions, I am going to try this!

85 Snack Ideas for Kids (and Adults!)100 Days of Real Food Challenge – Tame the after school munchies with these healthy snack ideas.

Emeals Lunch PlanEmeals – I love the folks at eMeals because they listen to their customers and continuously create new menu plans.  This time they have created a lunch menu plan!   They also offer a back to school checklist that contains 5 days of their lunch menu plan as well as printable messages to go in your child’s lunch!  (See the sidebar on the website.)

Thanks for this blog…my most allergic son just started a private school and we’re on a new nut free, dairy free and sesame seed budget. I think sometimes we all get a bit overwhelmed with our dietary needs and budgeting. Your site certainly brings peace of mind that it can be done!

Keep up the great work!

Thanks for stopping by. Adapting to food allergies and intolerances on budget can be done, it just requires some planning (and a lot of homemade cooking)!

I wanted to encourage you on the beans and meatless dinner idea. We implemented one night/week of meatless at the beginning of the year and have seen a huge impact on our grocery bill. It hasn’t gone done much, but not having to buy meat has allowed us to buy more produce and higher quality of other items (more organics). We also get to widen our recipe box. If you wanted some ideas, this squash pasta salad is a hit and can be varied to whatever you have on hand:

Also, the Mediterranean beans/rice from here was DELICIOUS!

Thanks for sharing the freezer cooking link! I am definitely going to do this :) My freezer is almost down to nothing. Better get on it.

Here’s a look at what I’ve been doing to get ready for school (that started this week!):
