We don’t know what to do with Eggplant, especially since Eggplant Parmagiana is out for us.  Now that eggplant is coming in our CSA baskets, we are going to get creative.  If you have any great eggplant recipes that don’t require cheese or dairy, please share in the comments.

Stuffed eggplant (but my only recipe includes cheese and bread crumbs)
Dice it and toss in stirfries
Plain old fried eggplant
I’ve also seen veggie lasagna recipes that use eggplant slices for the “noodle” but lasagna isn’t lasagna without cheese :(

I cook my eggplant with some pesto. The recipe is on allrecipes. My husband loves it.

It’s really good grilled! I grill my eggplant all the time to go along with our dinner as a side dish…just a little olive oil, and season the way you like! I also enjoy having grilled veggie sandwiches!

I love to simply slice eggplant into rounds, and bake them on cookie sheets until tender and soft (brushing with olive oil and sprinkling on a little salt if desired — and turning them once or twice during the baking). These rounds then make really great sandwich stuffers — very tasty with a little bbq or terriyaki sauce or some such….
