Our CSAs are starting to feel the effects of the extreme drought, but they have thus far been able to continue to deliver to us weekly, despite losing several crops. I am grateful and happy to put away some of the veggies for use in the fall and winter, hopefully lowering our grocery bill that way.
Here is our plan:
Tuesday–Beans and Rice, salad and Island Guacamole
Wednesday–Slow Cooker Pesto Chicken, Caramelized Onions with Beet Greens, Brown Rice
Thursday–Slow Cooker Roast with Carrots and Potatoes
Friday–Lamb Meatballs and Swiss Chard Soup
Saturday–Homemade Enchiladas, Island Guacamole, Salad
Sunday–Hamburgers on the Grill, French Fries, Sauteed Squash
Monday–Cabbage Stew
Desserts
Homemade Peppermint Patties (These are SO good and dairy free!)
Meals for the Freezer Using Our CSA Ingredients
Rigatoni with Swiss Chard and Bell Peppers (add the pasta when we are ready to eat it)
Chicken Apple Sausage, Kale and Rice Soup
