The month of April just flew by! May is going to be a busy month with my son at school, so I imagine it will just fly by too.
I have been gluten free for one week, and my energy levels have returned. I have also been eating healthier, so I am not sure yet the gluten is the problem. I will stay off it for a week, and then I will try eating some gluten and see how I feel and how my body reacts.
Here is the plan for this week:
Tuesday—Eggplant Antipasto, shredded chicken
Friday–Clean Taco Salad (recipe from eMeals Clean Eating plan)
Saturday—Soy Free Beef and Broccoli Stir Fry with soy free fried rice (love my husband for coming up with these recipes!)
Sunday—Cabbage and Beef Soup, homemade bread for the family
