The month of April just flew by! May is going to be a busy month with my son at school, so I imagine it will just fly by too.
I have been gluten free for one week, and my energy levels have returned. I have also been eating healthier, so I am not sure yet the gluten is the problem. I will stay off it for a week, and then I will try eating some gluten and see how I feel and how my body reacts.
Here is the plan for this week:
Monday–Fresh Tomato Soup (recipe from eMeals Clean Eating plan), homemade garlic bread for the rest of the family, roasted carrots and summer squash
Tuesday–Eggplant Antipasto, shredded chicken
Wednesday–Baked Parsnip Fries with Rosemary for everyone, Lighter Meatloaf for the family, shredded chicken on a corn taco for me, sliced cucumber
Thursday–Kale Chips, Refried Bean Corn Enchiladas using Homemade Enchilada Sauce
Friday–Clean Taco Salad (recipe from eMeals Clean Eating plan)
Saturday–Soy Free Beef and Broccoli Stir Fry with soy free fried rice (love my husband for coming up with these recipes!)
Sunday–Cabbage and Beef Soup, homemade bread for the family
