Menu Planning, April 1, 2012

The tight grocery budget continues as we pay in advance for our CSA and 1/2 side of beef that we will get from my cousin this month.  Although the budget is tight now, we will soon have a much lower grocery bill when our CSA shares come in beginning in June and our freezer is full of locally grown, grass fed beef.

Here is the plan for the week:

Monday
B–scrambled eggs, homemade cinnamon bread French toast, fruit
L–peanut butter and jelly sandwiches, carrot sticks, pretzels
D–Slow Cooker White Chicken Chili,  Quinoa Pilaf, green beans

Tuesday
B–scrambled eggs, banana muffins, fruit
L–leftovers or sandwiches
D–leftover Garlicky Spaghetti with Beans and Greens, mixed veggies

Wednesday
B–Breakfast Mueseli, fruit
L–sandwiches or leftovers
D–Lighter Meatloaf, Potato Hash, mixed vegetables

Thursday
B–oatmeal with blueberries and bananas, eggs
L–Award Winning Chili for me and the girls, sandwiches for the guys
D–Stuffed Pepper Soup

Friday
B–eggs, fruit, oatmeal
L–leftovers or sandwiches
D–sushi (my birthday dinner!)

Saturday
B–eggs, oatmeal, fruit
L & D–meals and snacks at relatives

Sunday
B–eggs, diced potatoes, fruit
L–tuna salad and crackers, fruit
D–dad’s choice

  2. What a great looking menu! I love stuffed pepper soup too… not sure I’ll ever make stuffed peppers again- the soup is so much easier and everyone actually eats the pepper this way :)

    • I am with you. I don’t think I will ever make stuffed peppers again when the soup is so much easier!
