We are stocked up on chicken because I bought three rotisserie chickens to make homemade chicken stock, so there are several chicken recipes featured this week. I am going back to just listing our dinners because my husband is in charge of breakfast, and he usually ignores my plan and makes whatever he wants. :) I am not complaining, though. I am happy he enjoys breakfast duty.
Monday–Crock Pot Chicken Taco Chili
Tuesday–Chicken Noodle Soup
Wednesday–Quinoa Chili
Thursday–Chicken Taco Chili Pizza (This is an experiment. I will put the leftover chili from Monday on a pizza crust and bake. We’ll see how it goes!)
Friday–leftovers
Saturday–Lighter Meatloaf, Dairy Free Mashed Potatoes, peas
Sunday–Mustard Marinated Steaks, Diced Potatoes, green beans

Thank you for providing the link to the no-dairy mashers – my son seems to have a dairy sensitivity, but loves mashed potatoes. We had done menu planning for years, but have gotten away with it since the arrival of our second child (the aforementioned dairy-sensitive son). Maybe it’s time to get back on track!
Let me know how you like them! My mom, who is very attached to her mashed potatoes with loads of butter and milk, loves these too.
