There is one week left in the month, and with our grocery money now gone (definitely budgeted too little for groceries this month), we are down to cooking from the pantry and freezer.  Considering that both are still stocked, we should still eat well this week.  I am also bored with our current breakfast meals, so this week we have plenty of new ones to try.

B–Oatmeal with blueberries and bananas, eggs, milk
L–leftovers for the guys, mini freezer meal for me and the girls
D–Black Bean and Salsa Chicken, brown rice, broccoli spears

B–Cinnamon Walnut Quinoa with Raisins, fruit, milk
L–sandwiches or leftovers
D–Flautas with Shredded Chicken (sprayed with oil and baked instead of fried)

B–Baked Eggs with Spinach, Tomatoes and Garlic, milk, fruit
L–sandwiches or leftovers
D–Lighter Meatloaf, Green Beans with Cherry Tomatoes, Dairy Free Mashed Potatoes

B–Chicken and Broccoli Quiche Cups, fruit, milk
L–sandwiches or leftovers
D–Skillet Gnocchi with Chard and White Beans

B–Scrumptious Swiss Oats and Fruit, milk, eggs
L–sandwiches or leftovers
D–Best Barley Soup, sauteed spinach

B–dad’s choice
D–dad’s choice

B–dad’s choice
L–sandwiches, fruit
D–Pulled chicken sandwiches with homemade bbq sauce (to avoid soy in the store bought BBQ sauce), homemade rolls, homemade french fries, frozen mixed veggies

  1. After our Xmas leftovers, we had the rightovers. Sorry about that. But like you we do a menu for the week or month and it is a good way to economise and improve the quality of eating.

  2. Yum! Sound like you are well-stocked. I’m glad that we made a big grocery run at the beginning of the year, as my sweetie’s job (which paid for living expenses like groceries) was suddenly yanked out from under her. We’ll be eating from the pantry and freezer (supplemented with catering leftovers from my office) until she gets some part-time work.
