While it seemed to take all of my day, there were plenty of breaks during my freezer cooking Saturday and Sunday to accommodate kids. I actually only cooked about 4 hours, including clean up and ended up with the following for the freezer:
Turkey Croquettes - At least 6 meals
Meatballs – 7 Meals
Pumpkin Muffins - 48
Sweet Potato Waffles & Pancakes - 28
Orange Puree - 3 ice cube trays full
Homemade Fries - enough for 6 meals’ side dish
Ham & Egg Breakfast Burritos - 16 servings
It is nice to have my freezer stocked with some homemade “convenience” foods again. If there is one thing this pantry challenge has taught me, it is that I do not like cooking dinner every night!
I would much rather do once a month cooking and enjoy the benefits all month long.

Yum! I did a big chicken session recently and we are really enjoying pulling out casseroles for dinner and pint jars of chili for lunch.
Sounds great. As soon as we buy our beef from my cousin I plan to make some more chili. Yum.
I’m going to have to try the homemade fries. I have a recipe we love but have been a little afraid to freeze them. I’m going to give a shot and see if it will work for me. Thanks!

How do the fries hold up in the freezer? Have you done them before?
Yes, I have made the fries before. They hold up great. I just pop them in the oven for about 10 minutes right from the freezer and they are ready to eat. So easy!
Looks great! I did freezer cooking this month. I haven’t done it in so long and I can’t believe how nice it feels to have the major prep work done on a lot of our meals for this month!!
It only took you four hours??? You just about sold me on once a month cooking with that statement right there! I could spend four hours just making four meals!
