November Freezer Cooking Wrap Up

When I was younger and used to write short stories, I never bothered with an outline because invariably, I would start writing and as I wrote, the story would take a turn that I was not expecting. . .

That about sums up my chaotic, unorganized freezer cooking weekend.  Definitely this was one of the most unorganized freezer cooking days ever.  My mom came to visit on Friday night, and we thought she would be staying until Sunday.  She ended up deciding to go home on Saturday to get some yard work done, so I got half of my freezer cooking done on Saturday and the other half on Sunday.  I also made some recipes that weren’t on my plan and didn’t complete some that were.

Even though it was a bit chaotic, I did get quite a few items to put in the freezer.  Here are the results:

Meals:
Beef & Bean Burritos (20 servings)
Crab Cakes (16 servings)
Meatballs (45 individual meatballs)
Southwestern Chicken Tacos (2 meals)
Chicken Burrito Wraps (8 servings)
Italian Chicken Breasts (8 servings)

Breakfasts:
Crunchy Granola (not pictured)
Egg & Sausage Breakfast Burrito (16 servings)
Banana Muffins (20 muffins)
Chewy Energy Bars (15 bars)

Baby Food:
Pumpkin – 16 servings
Butternut Squash – 20 servings
Sweet Potatoes – 8 servings
Yellow Squash – 8 servings

We are stocked up now, so as I have been saying, it is time for a pantry challenge. . . More on that in the next few days.
